There's something so sweet about strawberry season. Oh, yea. It's the strawberries. Xandra shows us how to make chocolate covered strawberry baskets, and while the strawberries ARE the stars of this dessert, it's the chocolate that makes these adorable NordicWare Basket cakes a spectacular treat. So, while we wait for strawberry season to get here, pick up a carton at your local grocery store and buy the best quality dark chocolate you can.
For the cakes:
-Use your favorite cake recipe or boxed mix. Prep & bake the NordicWare Shortcake Baskets pan according to the instructions on the packaging.
-Xandra suggests wiping clean the strawberries with a damp cloth. Do not submerge strawberries in water-they tend to absorb too much water this way. Wiping them off with a damp cloth will suffice.
For the chocolate:
-Xandra prefers using a good, high quality dark chocolate, like Ghirardelli. She also prefers to weigh her ingredients with a kitchen scale.
-Here's her super secret trick: make a ganache with the chocolate & heavy whipping cream. This allows her to coat the strawberries well and prevents them from drying too hard and cracking.
Heavy Cream 8 oz
Ghirardelli Chocolate 6 oz
Heat cream until hot and steamy but not boiling. Pour over chocolate and allow to sit for two minutes. Start stirring with tiny circular motioning the center of the mixture until chocolate is incorporated and melted.
Add about 1 tablespoon of ganache to the top of each basket, and set aside.
Dip prepped strawberries and place on parchment or wax paper. Decorate with sanding sugar or sprinkles while chocolate is still wet. Allow strawberries to set up.
Xandra used an edible glitter to add extra shine & glimmer.
Add 2 or 3 strawberries to the top of each cake, as desired, and serve.
