This amazing meat loaf recipe bakes up moist, tender, and so flavorful. Made with the NordicWare Meat Loaf Pan, Xandra has taken her friend MeLinda's already delicious recipe and elevated it with the Sweat Heat of Truth Sauce for a rich bacon & cheddar topped meatloaf.


Melinda's Meat Loaf with Truth Sauce
4 slices white bread
1 1/2 lbs beef
1 lb sweet Italian sausage
1 onion, finely chopped
4 cloves garlic, minced
1 celery stalk, finely chopped
2 carrots. grated
1/2 c. parsley
1/2 c fresh spinach
1 bell pepper, finely chopped
2 eggs
3/4 c. Truth Sauce or ketchup, divided into 1/4 c and 1/2 c
4 tsp dry mustard, divided 2 tsp each
salt and pepper
2 Tbs. brown sugar
4 slices bacon, chopped and crispy
1/2-3/4 c sharp cheddar cheese

Preheat oven to 400. In a food processor, pulse bread until fine crumbs. Put those in a large bowl. Add veggies to the food processor and pulse until all veggies are finely chopped. Add meat, salt, pepper, 1/2 c Truth's Sauce or Ketchup, and 2 tsp dry mustard to the breadcrumbs and mix well with your hands. Add in veggies and mix well. Divide into 2 loaf pans and brush with glaze.
Bake for 1 hour and 15 minutes. Top with cheese and bacon. Bake for 10 more minutes.
Glaze:
Remaining (1/4 C.) Ketchup or Truth's Sauce
2 tsp dry mustard
2 Tbsp brown sugar (optional if using truth sauce)
Mix until smooth
