A cake mix can just as easily be used with our NordicWare cakelet pans as a from-scratch recipe, but when the sweet tooth beckons or you've left a box mix off your grocery list, this easy cakelet recipe is perfect for the job.
Easy Cakelet Recipe
PREP: 10 MINUTES
COOK: 25 MINUTES
- 1 cup sugar
- 1/ 2 cup butter melted and slightly cooled
- 1 1/ 2 cups flour
- 1/ 2 cup milk
- 1 teaspoon baking powder
- 1 teaspoon vanilla
- 1/ 4 teaspoon salt
- 2 eggs
- 2 tablespoons cocoa (optional)
Preheat oven to 350. Prep pan with shortening and flour or use baking spray. In a large bowl mix sugar and butter at low speed until well blended. Increase to medium speed and beat until light and fluffy. Add flour, milk, baking powder, vanilla, salt and eggs.
Pour evenly into prepared pan. Bake for 20-30 minutes or until toothpick inserted in the cake's center comes out clean. Cool cake in pan on rack for 10 minutes. Turn out on rack and cool completely.
