How to Make Dean Jacob's Original Créme Brulée

Add heavy whipping cream, half & half, and packet of Créme Brulée Quick Mix into a 2 quart saucepan. Whisk to combine. Stir constantly and cook over medium heat. Bring to a boil. Reduce heat and simmer for an additional minute. Remove from heat and pour into heat resistant ramekins. Chill for 1 hour. 

Once chilled, blot the top with a paper towel to absorb moisture. Sprinkle the caramelizing sugar evenly over the top of créme.

To use a culinary torch, hold flame 1-2 inches from the surface at an angle. Move the flame continuously over the créme in a sweeping motion. Caramelizing is finished when the sugar is melted to a golden brown. It will harden as it cools.

To use an oven broiler, place cooled dishes on a baking sheet and put in a pre-heated broiler, 3 inches from the heating element. Watch carefully and rotate tray, if needed, for even caramelizing.
