Strawberry & Lemon Mousse Sugar Cookie Cups

Strawberry & Lemon Mousse Sugar Cookie Cups

*Note: each packet of seasoning mix makes A LOT of mousse. To use all the mousse with sugar cookie cups, you'll need to have 3 or 4 packages of sugar cookie dough.

We made 30 sugar cookie cups and served the rest as a dip with graham crackers, vanilla wafers, and fresh fruit.

Ingredients:

For the dip:

  • Carmie's Strawberry Patch Cheesecake Dip Mix
  • Carmie's Lemon Grove Cheesecake Dip Mix
  • 2 (8oz) packages cream cheese, softened
  • 2 (8oz) containers "non-dairy whipped topping" (we recommend Cool Whip)
  • Strawberries & Lemon wedges for garnish.

For the sugar cookie cups: (makes approximately 30 cups)

  • 1 package sugar cookie mix
  • 1 stick of butter, softened (not melted!)
  • 1 egg

Instructions:

Make the dips:

  1. Mix contents of seasoning packet with 8 oz. softened cream cheese until well blended, using an electric mixer.
  2. Fold in 8 oz. non-dairy-whipped topping.
  3. In a separate bowl, repeat process for 2nd dip mix.
  4. Refrigerate while baking the sugar cookie cups.

Make the sugar cookie cups:

  1. Preheat oven to 350°
  2. Prepare the cookie dough according to package directions.
  3. Roll sugar cookie dough into 1-inch balls and place in a mini muffin pan.
  4. Bake at 350° for 15 minutes.
  5. Remove from oven and use the end of a wooden spoon to push down the center of each sugar cookie muffin. We used the end of a silicone whisk that worked great! You could also use a small shot glass.
  6. Let cups cool completely.

To assemble:

  1. Fill a piping bag with mousse. (we used tip #16 for these cookie cups)
  2. Pipe mouse into half the sugar cookie cups.
  3. Repeat with second mousse and the rest of the cups.
  4. Top each with desired fruit.
